My flock of urban chickens have had quite the busy and productive Spring this year. They enjoyed free-ranging in the backyard in the early months while I had my row covers on, but on now back on ranging hiatus in their coop while the garden grows in.
Since late February they have been steadily producing eggs. Pearl will be entering her fifth or sixth summer this year, but has been giving me a narrow-shaped greenish-blue egg about once every other day. Florence and Maude will have their third summer this year. They are both terrific layers and very low maintenance girls.
As much as I miss fresh eggs in the winter months when they take a break, I am now starting to get completely overrun with them again. I thought this would be a good opportunity to share some recipes, in case you are feeling the same way with your backyard flock of chickens:
- Kale & Potato Spanish Tortilla
- Cowboy Hash
- Six Egg Pound Cake (on my list to try, but looks good!)
- Homemade Aïoli
- Vanilla Crepes
- German Pancakes
Other things I have been making that I kind of make up recipes for are:
- Fried eggs over toast with melted Parmesan cheese
- Pasta noodles
- Egg salad – Just throw a dozen eggs in the fridge and forget about them for at least a week, so the egg separates from the shells when hard boiling
